It’s time for something new and after months of hard work, dedication and of course tasting the new dishes, the team at Willow are excited to announce they have a brand new menu launching on Wednesday 10th May

We caught up with Jamie Smith, Parogon Groups Executive chef.

‘Willow has almost been open 2 years now and although we have made tweaks to the menu in that time, we haven’t really done an extensive overhaul so we thought it was time to give the menu a freshen up and add some great new dishes’

With its vibrant flavours, bright colours, and exciting textures, the Mediterranean-inspired menu is sure to be a hit.

From early breakfast right through to dinner and cocktails, they have taken everything that already made the menu great and given it a boost with some great new dishes.

We asked Jamie for some of his recommendations.

“That’s tricky as I naturally think all the new dishes are worth shouting about, but if I was to pick a couple of dishes then I would have to start with the spaghetti carbonara arancini. Chances are people won’t have seen this before, but I think this will soon become a hit and it tastes amazing with it’s gorgeous garlic & herb glaze and carbonara sauce”

“For main course, and because of the time of year then I would have to say that nothing shouts summer like a paella and our king prawn paella is not one to be missed, it’s vibrant, flavourful and would probably go really well washed down with a glass of sangria”

Jamie also pointed out that their new pinsa selection is sure to be a hit.

‘Everyone has had pizza, but have they had pinsa? These are going to be a fantastic addition this summer. Essentially pinsa’s are baked hand-stretched roman flatbread which we have topped with delicious ingredients. There is a great choice but my recommendation would be proscuttio & whipped burrata with baby gem, rocket, truffle and Italian cheese!’

The new menu is bursting with flavour and whether you’re in the mood for a light snack after a walk around the lake, a birthday brunch with friends or a special dinner date the new menu has something for everyone.
